Stuffed Bell Peppers

Bell Peppers are a good choice of vegetable to be baked with some stuffing, as they hold their shape well. They also have a very subtle taste so they go with any filling.
Bell peppers stuffed with mince with a combination of rice and cheese, and baked over a bed of potatoes with a flavorsome sauce is a dish that’s worth trying!

Ingredients-
For Stuffing-
Bell Peppers (Capsicum)- 6 medium size
Mutton mince- 350 gms
Mozzarella Cheese- 1 cup for stuffing
                                 1-2 cups for topping
Cooked Rice- 1 cup
Onion- 2, chopped
Potatoes- 2-3, cut into thick slices
Tomatoes- 2, chopped
Tomato paste- 3 tbsp
Red chilli paste- 1-2 tsp
Parsley- Handful, chopped
Dried Oregano- 1 tsp
Olive Oil- 1/4 cup
Garlic- 1 tbsp, chopped
Celery- 1 tbsp, chopped
Black Pepper pwd- 1 tsp
Salt- To taste
For the Sauce-
Onion- 1, chopped
Tomatoes- 2, chopped
Butter- 3 tbsp
Garlic- 1 tsp, chopped
Celery- 1 tbsp, chopped
Red chili flakes- 1 tsp
Vinegar- 1 tsp
Tomato ketchup- 2 tbsp
Tomato paste- 1 tbsp
Dried Oregano- 1 tsp
Salt- to taste
Parsley- 3 tbsp, chopped
Method-

Step 1. Prepare the stuffing. Heat 1/4 cup olive oil, add 1 tbsp chopped garlic and 1 tbsp chopped celery, saute for a minute.

Step 2. Add 2 chopped onions, saute till they are translucent.

Step 3. Add 2 chopped tomatoes, 3 tbsp tomato paste and 1 tsp red chilli paste.

Step 4. Add 350 gms mutton mince and mix well. Season with salt and 1 tsp black pepper pwd. Keep cooking on medium heat.

Step 5. Add handful of chopped parsley and 1 tsp oregano, cook till dry.

Step 6. Prepare the sauce. Heat 3 tbsp butter, add 1 tsp chopped garlic and 1 tbsp chopped celery. Fry for a minute, then add 1 chopped onion and saute till translucent.

Step 7. Add 2 roughly chopped tomatoes. salt to taste, 1 tsp red chili flakes, 1 tsp vinegar, 2 tbsp tomato ketchup and 1 tbsp tomato paste.

Step 8. Bring to boil then add 1 tsp dried oregano. Cool and blend into a sauce, adding some water to make it into a pouring consistency.

Step 9. Mix mutton mince, with 1 cup cooked rice and 1 cup mozzarella cheese.

Step 10. Grease a dish with oil or butter and spread a layer of thickly sliced potatoes.

Step 11. Core bell peppers and stuff them with mince, rice and cheese filling.

Step 12. Place the stuffed bell peppers on top of the potatoes and pour sauce on them, covering the potatoes as well.

Step 13. Bake in a preheated oven at 180 degrees Celsius for 25-30 minutes. Remove and top with 1-2 cups of cheese and bake for another 10 minutes.

Stuffed Bell Peppers are now ready to be served!
