Mutton Chops Masala






This easy-to-cook Dhaba Style Chop Masala will remind you of road trips made in India. We have kept it mildly hot and heavily fragrant with ground spices, onions and tomatoes. It will satisfy your craving for authentic dhaba-style food. Its a perfect dish for parties , pot lucks or as a family meal. It is a spicy non-vegetarian dish that you can have with naan or rotis.

List of Ingredients
Mutton Chops- 500 Grams
Onion – 2 Medium (200 Grams)
Ginger Garlic Paste- 1 Tbsp
Yogurt – 3 Tbsp
Cumin Pwd.- ¾ Tsp
Turmeric Pwd- ½ Tsp
Coriander Pwd- 1 Tbsp
Black Pepper Pwd- ¾ Tsp
Red Chilli Pwd- 3 Tsp
Garam Masala Pwd ¾ Tsp
Kassori Methi – 1 Tbsp
Oil- ¾ Cup (200 Ml)
Green Cardamon- 3 No
Black Cardamom – 1 No
Cinnamon – 1 Inch
Cloves- 5-6 No
Peppercorns – 5-6 No
Bay leaves – 2 No
Whole Red Chillies- 3 No
Ginger Julienne- 1 Tbsp
Tomato 3 medium – (300 grams)
Coriander leaves – Chopped handful
Salt to taste
Method-
Step 1. Boil chops with salt, ginger garlic paste, black pepper pwd, cumin pwd, coriander pwd, red chilli pwd (1 tsp, balance to be added later), turmeric pwd, chopped onions and yogurt. Keep aside.
Step 2. Heat oil in pan, add black cardamom, green cardamoms, cinnamon, cloves, black peppercorns and bay leaves.
Step 3. Once the spices start spluttering add the ginger juliennes and whole red chillies. Fry till ginger starts browning.
Step 4. Add chopped tomatoes, 2 tsp Kashmiri red chilli pwd and salt. Cook for 5-6 minutes till tomatoes are soft and oil seperates.
Step 5. Add the boiled chops and keep cooking on high heat for another 5-6 minutes till gravy reduces and becomes semi dry.
Step 6. Add garam masala pwd and kasoori methi pwd and let cook for 2-3 minutes more till oil floats on top.
Step 7. Add handful of chopped coriander leaves.
