Deep Dish Chicago Style Pizza

This pizza is Chicago style which has a thin and crusty base with loads of cheese and sauce. Adding toppings is optional, just cheese and sauce in the pizza tastes amazing too. Since it’s baked at a high temperature the cheese is at the bottom so that it doesn’t burn and the sauce is at the top. Hope you enjoy this delicious pizza. Ingredients-

Dough-

  1. All purpose flour- 2-1/2 cups
  2. Instant yeast- 1 tsp (3 gms)
  3. Sugar- 2 tsp
  4. Salt- 1/2 tsp
  5. Vegetable oil- 2 tbsp
  6. Warm water- 1 cup

Sauce-

  1. Olive oil- 2 tbsp.
  2. Chopped garlic- 1 tbsp
  3. Tomato puree- 3 medium (250 gms)
  4. Chopped tomatoes (I have taken canned Italian tomatoes)- 250 gms
  5. Salt- 1/2 tsp
  6. Sugar- 1/2 tsp
  7. Red chilli pwd- 1/2 tsp
  8. Dried Oregano- 1/2 tsp
  9. Tomato ketchup- 2 tbsp
  10. Saltless butter- 2 tbsp

Toppings-

  1. Handful each of chicken franks, pepperoni, olives and any other toppings of your choice.
  2. Mozzarella cheese- 2-1/2 cups- 3 cups

For base-

  1. Parmesan Cheese- 2 tbsp approx.
  2. Butter- 2 tbsp approx

Method-

For the dough-

Step 1. Prepare the dough by mixing all dry ingredients, add oil and mix with wooden spatula.

Step 2. Gradually add 1 cup warm water and mix. Remove from bowl and knead for 5-10 minutes with stretching and folding in. Knead till it forms a soft and firm dough.

Step 3. Oil the dough ball and cover and keep aside for 1 hr.

Step 4. After 1 hr it doubles in size. Beat out the air from the dough and again knead for 5 mins by stretching and folding. Cover and keep aside to prove for another 30 minutes.

Prepare the sauce-

Step 1. Heat olive oil and fry chopped garlic in the oil for a minute.

Step 2. Add chopped onion and fry till onions are soft and translucent.

Step 3. Add tomato puree and chopped tomatoes.

Step 4. Cook for 2-3 minutes till the sauce thickens.

Step 5. Add tomato ketchup and butter. Bring to boil.

Pizza-

Step 1. Roll the dough into 15″ diameter.

Step 2. Take a 9″ baking pan, grease generously with butter and sprinkle with Parmesan cheese.

Step 3. Gently place the rolled dough inside and turn it at the edges to make a 2″ depth. Press edges to the pan.

Step 4. Put mozzarella cheese on the base, spread all toppings and top with the sauce. Sprinkle Parmesan cheese on top.

Step 5. Bake in a preheated oven @ 230 degrees Centigrade for 20 minutes.

Step 6. Remove and let stand for 5 minutes.

Step 7. Slowly remove in serving dish.
