Cilantro Lime Rice

A stir-in of cilantro and lime juice transforms plain cooked rice into a lively dish that’s an ideal accompaniment for Mexican or Indian main dishes. I have added Kofta to convert to Pilaf and the preparation is one pot for easy and quick cooking.

Cilantro lime rice with kofta made well is irresisitble.

It makes a wonderful side dish for chicken or lamb as dry or curry preparations. It can also be had as a main dish by itself.

Ingredients-

  • Mincemeat- 250 grams
  • Basmati rice- 500 grams
  • Onion – 1 chopped
  • Vegetable oil- 1 cup
  • Ginger-garlic paste- 2 tbsp
  • Green chilli paste- 2 tsp
  • Yogurt- 1 cup
  • Bay leaves- 2-3 no
  • Cinnamon- 2” stick
  • Black cardamom- 2 no
  • Green cardamom- 2-3 no
  • Black peppercorns- 8-10 no
  • Cloves- 6-7 no
  • Coriander pwd- 1 tbsp
  • Cumin pwd- 3/4 tsp
  • Fennel seeds pwd- 1 tsp
  • Garam masala pwd- 3/4 tsp
  • Cumin seeds- 1 tsp
  • Caraway seeds- 1 tsp
  • Mint leaves- 1 cup
  • Coriander leaves- 2 cups
  • Lime juice- 2 tbsp
  • Salt – To taste
  • Almonds & Cashewnuts- Handful

METHOD-

Step 1. Heat 3/4 cup oil in a pan. Add cloves, peppercorns, cinnamon, bay leaves, green cardamoms, black cardamoms, cumin seeds and caraway seeds.

Step 2. Add 2 tbsp ginger-garlic paste and 2 tsp green chilli paste.

Step 3. Add chopped onion and fry till soft and translucent, the add salt.

Step 4. Add meatballs made out of 250 grams of mincemeat and fry them for 1-2 minutes on both sides.

Step 5. Add cumin pwd, coriander pwd, fennel seeds pwd, garam masala pwd and 1 cup beaten yogurt. Mix gently in the koftas.

Step 6. Add basmati rice that has been soaked in water for 30 minutes and hot water.

Step 7. Cook on high heat till most of the water is absorbed, then cover and cook on low heat.

Step 8. In the meantime blend together coriander leaves, mint leaves, salt, lime juice and vegetable oil.

Step 9. When the rice is almost done add this paste and mix gently. Cover and cook for another few minutes till rice is cooked completely and all moisture is dried.

Serve garnished with fried nuts.
